Taste Mid Ulster Signature Dish

The Gasworks Slow-Fire Rib

Slow-braised Carnbrooke short rib forms the heart of the plate. Sourced from Carnbrooke Meats, one of Northern Ireland’s most respected butchers, the beef is carefully selected for its marbling and depth of flavour. The rib is gently braised for hours until meltingly tender, allowing the natural richness of the meat to shine.

It rests on a bed of homemade champ, a traditional Irish favourite elevated with locally grown scallions folded through fluffy, buttery potatoes. The champ provides comfort and nostalgia — grounding the dish firmly in Irish culinary tradition.

Alongside, we serve seasonal vegetables supplied by Bradmount, showcasing the freshness and quality of Mid Ulster produce, simply prepared to highlight their natural flavour.

The dish is finished with a bone marrow gravy, made in-house using roasted marrow bones and reduced beef stock, creating a glossy, intensely flavoured jus that enhances the richness of the short rib while tying the plate together.
